Here is a handy little recipe to prepare ahead and share with your kayaking buddies. They were a big hit at our Level One course!
BIRD SEED BARS
1 C peanut butter 2 C Rice Krispies
¾ C brown sugar 1 C pumpkin seeds
(or ¾ c. white sugar + 1 tbsp. molasses)
1 C corn syrup (or part honey) 1 C sunflower seeds
4 tsp. butter or margarine 1 C sesame seeds, toasted
2 C Corn Flakes 1 C flax seeds
1 C unsalted nuts (not peanuts)*
* salted almonds do nicely!
Over medium heat, stir together peanut butter, brown sugar, corn syrup and butter or margarine until just boiling. Stir constantly; do not burn! Remove from heat and mix in other ingredients. Mixture will be very stiff. Immediately flop this into an 8 X 8 or 11 X 7 pan, lined with plastic wrap for easy removal later on. The smaller the pan, the thicker the bars will be. Pat the mixture down firmly. Refrigerate for at least a half hour before cutting into squares. Wrap individually for a convenient trail snack. Recipe can be halved. Best to keep in cool storage or freeze for future use. Enjoy!
